This Zucchini Boats recipe are a simple crowd-pleaser and can easily become a staple in your kitchen.
Zucchini Boats

Ingredients
2 large zucchinis
1/4 – 1/2 cup salsa or tomato sauce
1/2 cup diced veggies like peppers, onions mushrooms, sundries tomatoes, olives, spinach
handful of olives
1 garlic clove chopped
2 tbsp. nutritional yeast
Instructions
Preheat oven to 400.
Wash and cut zucchinis lengthwise and scoop out the seeds.
Add tomato sauce or salsa, veggie toppings, garlic, any seasoning and then put on a baking sheet and into the oven for 40 minutes.
When nearing the finish time poke the zucchini meat to see if soft.
This is a great base recipe to allow your creativity to flow, or to just help empty out the fridge of veggies nearly their end date.

Zucchinis: The star of this recipe, zucchinis contain potassium, folate, Vitamin A and C. During zucchini season buy locally and you will be surprised to find zucchinis that are nearly 3 times the size of what you’ll find in the grocery store.
Tomatoes: High in lycopene, a phytochemical that enhances the body’s defences against diseases like cancer, heart disease and macular degenerative disease. Studies have shown that those that have more lycopene in their diets have lower rates of cancer. Good enough reason to me!
Dulse: A sea vegetable that can usually be found in flakes. It can be sprinkled on top of everything from veggies to salads, rice dishes and casseroles. Dulse, like other sea veggies is high in iodine, which is essential for thyroid health.
