Vegan Buffalo Drumsticks

Our Vegan Buffalo Drumsticks are a simple crowd-pleaser and can easily become a staple in your kitchen.
Vegan Buffalo Drumsticks

Ingredients
1 medium head cauliflower, cut into florets
1 cup sprouted Spelt flour or Gluten-Free flour
1 tablespoon of onion flakes
1 tablespoon garlic powder
1/2 teaspoon salt
Black pepper, to preference
1 cup unsweetened almond milk
1 cup panko breadcrumbs
Instructions
Preheat oven to 425°F.
Mix together the flour, spices, salt and pepper. Stir in plant-milk or water. The batter should be just a bit thinner than pancake batter.
Toss cauliflower florets in batter and cover completely.
For each piece of cauliflower, let the additional batter drip off and then coat in panko crumbs. (I recommend dipping each floret individually rather than dumping all the cauliflower in the breadcrumbs at once. The breadcrumbs start to get soggy if the battered cauliflower sits in them too long, and they won’t stick as well.)
Spread cauliflower on a lined baking tray. Bake for 35-40 minutes, until slightly golden brown.
Optional: Toss in your favourite barbecue sauce and hot sauce and return to oven for another 8-10 minute to bake the sauce into the cauliflower. This will make them a bit soft.
