This Green Pea & Leek Soup recipe are a simple crowd-pleaser and can easily become a staple in your kitchen.
Green Pea & Leek Soup
Ingredients
2 tablespoons of coconut oil
2 chopped leeks
1 yellow onion chopped
4 cups vegetable stock
6 cups canned or frozen whole green peas
salt
pepper
cilantro to garnish
Directions
Add coconut oil, leeks and onions to a large pot and heat on medium until onion becomes translucent. Add in vegetable stock and peas and cook for 8-10 minutes, about twice that if using frozen peas. Remove from heat and when soup has cooled enough to handle add into a food processor a few cups at a time and blend. Add salt and pepper to your preference.
