Peanut Sweet Potato Chickpea Stew

This delicious Peanut Sweet Potato Chickpea Stew recipe comes from the Anti-Cancer Cookbook, and we are excited to share it with you!

Peanut Sweet Potato Chickpea Stew

Ingredients

1 tbsp coconut oil
1 medium red pepper
2 tsp healthiest sweeter you have
1/2 tsp ground cumin
1/2 tsp ground cinnamon
1-2 sweet potatoes peeled and diced
1 can diced organic tomatoes
1 1/2 cups veggie stock
1 cup chickpeas, drained and rinsed
2 tbsp natural peanut butter
1/2 cup peanuts

Instructions

Heat oil on medium heat and add pepper until soft. Then stir in sugar, cumin, cinnamon and cook, stirring every 30 seconds. Add sweet potato and stir until coated. Then add in your tomatoes and stock and bring to a boil. Once boiling allow to simmer at low heat until sweet potato is soft. Add in chickpeas and peanut butter and stir until everything coated and even. Sprinkle with peanuts and enjoy.

Did you know?

This was such a delicious dish we wondered if it could possibly work in a crock pot, and guess what? It does!
It won’t have the same rich flavour but if you pour all ingredients into a crockpot on high heat for about an hour (check the softness of the sweet potato) you’ll still get a delicious meal!
Hold off on the peanuts until fully cooked.
