Rutabaga Quinoa Patties with Spicy Cucumber Dip

Rutabaga Quinoa Patties with Spicy Cucumber Dip

Rutabaga Quinoa Patties

Ingredients

1 cup quinoa, cooked
1 cup rutabaga, peeled and grated
1/2 cup – 1 cup mashed potatoes
1/4 cup shallot, finely diced
1 clove garlic, minced
1/2 tsp. turmeric or curry powder
1/4 cup fresh chives, finely minced
1/4 cup fresh parsley, finely minced
1/2 tsp. salt
1/4 tsp. pepper, freshly ground
A little oil for baking sheet

Instructions

Cook and cool quinoa and mashed potatoes prior to making full recipe. There is no need to add anything to the potatoes.
To prepare the rutabaga cut off both hard ends and peel outer waxing coating off and grate with a large grater.
Preheat oven to 400.
Mix all the ingredients together in a bowl until evenly mixed. Very lightly coat a baking sheet with oil. Coconut oil works well.
Now form little patties with a spoon or your hands and shape on a baking sheets with an inch or two between each patty. You’ll want them to be about an inch high and round in shape.
Put the patties into the oven for 10 minutes and then flip and leave them in there for an additional 10 minutes. You may need to help form them a little after the first flip as they are still binding.
Enjoy crumbled in a salad or just on their own with some spicy cucumber dip. 

Spicy Cucumber Dip

Ingredients

3 tbsp. vegan mayonnaise
1/2 tsp dill
1/2 tsp freshly squeezed lemon juice
1 tbsp chopped cucumber
dash of cayenne pepper

Instructions

Add all ingredients into a bowl and mix until even.
Add blobs on top of your patties or use it as a dip.
