This Black Bean Chili Lettuce Wraps recipe are a simple crowd-pleaser and can easily become a staple in your kitchen.
Black Bean Chili Lettuce Wraps
Ingredients
6 Whole Romaine Leaves
1 can of black beans or 1 1/2 cups cooked
1-2 tbsp chopped green pepper
1-2 tbsp corn
1-2 tbsp chopped zucchini
1 clove garlic
1 tbsp chopped onion
2 tsp nutritional yeast
1/4 tsp cumin
1/4 tsp chili powder
Guacamole and salsa to top
Directions
Add onions and garlic to a saucepan with a little water or oil on medium heat.
Add in green pepper, corn and zucchini and cook for about 5-7 min.
Add beans and spices. Cook for 1-2 minutes.
Add nutritional yeast, mix and remove from heat.
Sprinkle into one romaine leaf or two layered leaves, top with salsa and guacamole and voila!
*Use toothpicks to keep full leaves from spilling
